Ingredients to make Eggless teatime Banana walnut cake

  • 2 cups self raising flour
  • 150 gm butter
  • 1 cup milk
  • 1 tsp salt
  • 1 1/2 tsp vanilla essence
  • 1/2 cup or desired amount of walnuts (crushed)
  • 2 ripe bananas
  • 2 tbsp Lime juice/vinegar
  • 1 1/2 Castor sugar

How to make Eggless teatime Banana walnut cake

  1. Preheat the oven to 180 degree centigrade and keep your ingredients ready. Grease a cake tin which you will use to bake.
  2. In a bowl mix the butter and castor sugar and whip it till the mixture becomes light and fluffy.
  3. Put in vanilla essence, salt and lime juice. Whip it again for sometime. I personally used beater to whip the mixture.
  4. Mash the bananas thoroughly and mix it in the mixture. Beat the mixture to form a light texture.
  5. Add in the 1/2 cup self raising flour and 1/4 cup milk to the mixture and whip it for 2 minutes till it gets mixed thoroughly.
  6. Repeat the above procedure( mixing self raising flour and milk) till we get a lovely battery consistency.
  7. Mix in the walnuts and whip it again for some time.
  8. Pour the mixture in the greased cake tin and bake the cake on 200C temp for 35 mins or till the spoon comes out clean. Serve the cake once cooled.

My Tip:

In this recipe, as we are using self raising flour, no need to use baking powder or baking soda.
