Coconut Crepes in Orange Sauce

ABOUT Coconut Crepes in Orange Sauce RECIPE

Usually crepes are made out of all purpose flour.But i always make it with whole wheat as a healthy option.Its very yummy and my 2 1/2 year old baby's favourite breakfast.Please do try and you wont regret.

Ingredients Serving: 5

  1. 2 Eggs
  2. 3/4 Cup Coconut Milk
  3. 1 cup Wheat Flour
  4. 4 tablespoon sugar
  5. 1/4 tsp sea salt
  6. 1 cup milk
  7. 1/4 cup fresh / dry grated coconut
  8. Juice from 3 oranges
  9. Zest from 1 orange
  10. 1 teaspoon vanilla extract or paste
  11. 4 tablespoons sugar / honey
  12. 1 tablespoon butter
  13. 1 star anise

Instructions

  1. Combine everything in a bowl to whisk until smooth and combined. Rest for 5 minutes.
  2. Heat non stick pan over a medium – high heat. Brush a little oil. Add 1/4 cup of crepe mixture into the pan, tilting the pan around all sides so that the batter coats the base of the pan evenly.
  3. Cook for 1 – 2 minutes until golden, then flip over. Cook the other side of the crepe for only a few seconds then place onto a serving plate.
  4. Brush with orange sauce and fold into four and serve with more orange sauce. Repeat the process until the batter .
  5. To make the sauce: Combine all into a pan. Simmer for a few minutes or until the sauce thickens slightly.
