Ingredients Serving: 2

  1. 1 cup boiled chole chana
  2. 1 cup boiled and fried potato
  3. 1 1/2 cup boiled noodles
  4. 1/2 cup sliced onions
  5. 1 cup fried onions
  6. 1 cup thick coconut cream + 1 cup thin coconut milk
  7. 1 tbsp ginger-garlic paste
  8. 2 tbsp jeera
  9. 1 tsp hing
  10. 4-5 curry leaves
  11. 1 cup fresh tomato puree
  12. 1/2 cup mint and coriander leaves
  13. 1 tsp green chilli chopped
  14. 1/2 tbsp red chilli powder
  15. 1 tsp turmeric powder
  16. Salt to taste
  17. 1 tbsp oil
  18. 1/2 cup chopped capsicum
  19. 2 tsp garam masala powder
  20. 2 bay leaves
  21. 1/2 tbsp roasted chick pea flour
  22. 1/2 tbsp lemon juice

Instructions

  1. Heat oil in a pan, add jeera, green chilli, curry leaves, hing, onion and saute it.
  2. Add ginger-garlic paste when onion turns into slightly pink color.
  3. Add turmeric powder, red chilli powder and tomato puree. Cook it properly.
  4. Add capsicum, chole, potato, salt and thick coconut cream. Cook it properly.
  5. Add boiled noodles, mint, coriander and mix it well.
  6. Add thin coconut milk. Cook it well. Mix in chick pea flour in water and mix it in the khao suey.
  7. After it gets cooked properly, serve it with papdi puree.
