ABOUT Brinjal Rice RECIPE

This vegetable rice with coconut milk is so rich and creamy with the added flavors of vegetables & garam masala. I don't think the pictures do enough justice to its taste. Perfect recipe for lunch or dinner. At times the simple and quick versions taste much better than the lengthy and back wrenching procedures.

Ingredients Serving: 4

  1. 1 1/2 cup basmati rice
  2. 1 cup coconut milk
  3. 1 1/2 cup water
  4. 4 green chillies
  5. 1 inch piece ginger
  6. 3 garlic cloves
  7. 1 tsp fennel seeds
  8. 1 tbsp oil
  9. 1/2 tsp shahi jeera
  10. 2 cardamom pods
  11. 4 cloves
  12. 1 inch piece cinnamon
  13. 1 bay leaf
  14. 1 carrot chopped
  15. 2 potato chopped
  16. 1 onion sliced
  17. 1/4 cup frozen / fresh peas
  18. Salt to taste
  19. 1/2 tsp garam masala powder (optional )
  20. Few sprigs of cilantro / coriander, chopped

Instructions

  1. First prep up the vegetables. Wash and soak the basmati rice until use. In a small blending jar, add fennel seeds, green chillies, ginger, garlic and grind into a fine paste. Set aside.
  2. In a pan, add oil. Once warm, add the cardamom, cloves, cinnamon, bay leaf and shahi jeera. Allow them to pop.
  3. Stir in the sliced onions. Saute until slightly golden.
  4. Add the ground paste and saute for a minute until the raw smell from ginger and garlic disappears.
  5. Add in the chopped vegetables and peas. Stir well and saute.
  6. Stir in the coconut milk and water along with the salt.
  7. Bring this to a gentle boil then add rice, salt and half of the coriander leaves. Stir well.
  8. Cover and cook on a medium flame for 10 to 12 minutes until all the moisture is absorbed and the rice gets cooked. Once cooked turn off the heat. Sprinkle garam masala powder and garnish with remaining coriander leaves.
  9. Creamy coconut vegetable rice is ready.
