Coconut milk rice pudding with sweet corn

Ingredients Serving: 4

  1. 1/4 cup samba rice
  2. 500 ml coconut milk
  3. 1/2 cup thick milk
  4. 1/4 cup sweet corn
  5. 1/2 cup sugar
  6. 1/4 tsp cardamom powder
  7. 1 tbsp blanched almonds

Instructions

  1. Wash rice, add coconut milk and cook for 25 minutes.
  2. After 25 minutes, add almonds and sweet corn. Cook for 5 minutes.
  3. Add coconut milk, stir and see that it does not stick to the bottom of the vessel. Keep stirring. Cook for 3 more minutes, turn off the flame.
  4. It can be served hot and or cold.
