Oats and Apricot Granola Squares

Ingredients to make Oats and Apricot Granola Squares

  • 3/4 cup peanut butter
  • 1/2 cup dried apricots chopped roughly
  • 1/2 cup honey
  • 1 cup oats
  • salt a pinch

How to make Oats and Apricot Granola Squares

  1. In a heavy bottom saucepan heat the peanut butter until melted on low flame. Add honey, salt and apricots and mix.
  2. Add in 3/4 cup oats. Mix.
  3. If the mixture is still too wet add in more oats. I used almost of my 1 cup. So it will depend on the spot how much is needed.
  4. Line a square pan with foil or parchment paper. Tip in the granola mix and press it hard in a thin layer. Make sure to get it even around the edges.
  5. Let it cool at room temperature and then refregerate for at least 1 hour.
  6. Cut in squares and Enjoy!!

My Tip:

Its a great tiffin snack too. You can exchange the apricots for nuts or chocolate chips if you like.
