Aaloo Samosas

Ingredients to make Aaloo Samosas

  • all purpose flour 2 cup
  • salt 1 tsp
  • ghee or oil 2 tbsp
  • Milk 1/2 cup or more to knead the dough
  • For the potato filling:
  • Potatoes 3 to 4 large ones boiled and cut into small cubes
  • green chillies finely chopped 4
  • asafoetida a pinch
  • Crushed coriander seeds 1 tbsp
  • coriander leaves finely chopped a handful
  • onions 2 large finely chopped
  • salt to taste
  • oil 1 tbsp

How to make Aaloo Samosas

  1. Make a smooth dough and rest it for 30 minutes.
  2. Make small balls out of it about a lemon size.
  3. Roll them into small puris.
  4. Cut into two halves and make 2 samosas out of every 1 puri.
  5. For the filling: Heat the oil, add the asafoetida and the onions.
  6. Saute them well and add all the other ingredients.
  7. Garnish with coriander leaves and let it cool down a bit.
  8. Fill the samosas with this potato mix and deep fry.
  9. Seal the edges by pressing with your fingers.
  10. Serve with green chutney made up of coriander and mint.
