ABOUT Rice Porridge RECIPE

A porridge cooked in coconut milk is a soul food during summer. It is tasty and an wholesome diet of the people of south Kanara.

Ingredients Serving: 4

  1. Raw rice 150 grams
  2. Coconut milk 300 ml
  3. Salt to taste
  4. Water to cook

Instructions

  1. Wash the rice and keep it to boil on a medium flame. Add sufficient quantity of water.
  2. To extract coconut milk : Grate the coconut and put it in warm water for ten minutes.
  3. Grind it with a little water. Pass it through a sieve. This is the first extract of coconut milk.
  4. Repeat the step again and extract the milk. Both the extracts can be mixed together.
  5. Now, add the coconut milk extract to the rice being cooked along with some salt. Give a stir.
  6. Cook on a low flame for an hour. It should be soft and smooth.
  7. Rice porridge is ready to serve. Tastes good with mango pickle.
