Ingredients Serving: 2

  1. 1 full bunch of Spinach/Palak
  2. For Gram flour batter:
  3. 5-6 tablespoon gram flour/besan
  4. 1/2 teaspoon Ajwain
  5. 1/2 teaspoon red chilli powder
  6. A pinch of hing
  7. Salt as required
  8. Oil for frying
  9. Powdered bread crumbs 1/2 cup
  10. For assembling:
  11. 1 cup Curd (whisked)
  12. Green chutney (mint and coriander) as per taste
  13. Tamarind and date chutney(mixed together) as per taste
  14. Black chana (boiled) 1 cup
  15. Masala for toppings:
  16. Chaat Masala 1/2 tsp
  17. Red chilli powder 1/4 tsp
  18. Jeera powder 1/2 tsp
  19. Salt to taste

Instructions

  1. Carefully pluck the spinach leaves and wash it properly.
  2. Pat dry and sprinkle salt over it and keep it aside for 10 minutes.
  3. Prepare the batter of gram flour, ajwain, red chilli powder and salt using water. The batter should be slightly thick and not watery.
  4. Heat oil in a kadhai.Take a spinach leaf and apply the batter very gently with your fingers.
  5. Roll the leaf with the powdered bread crumbs carefully and fry on a medium flame.
  6. Repeat the same with all the leaves.
  7. At the time of serving, place the fried patta's on a plate. Add the toppings one by one. Curd, green chutney, tamarind date chutney, black chana, chaat masala, jeera powder and red chilli powder.
