ABOUT Coconut Cake RECIPE

A Coconut Cake is one of the most delicious and moist cakes around the world. It is spongy with the goodness of coconut and its flavours.

Ingredients Serving: 8

  1. Flour 1 1/2 cup (maida)
  2. Condensed Milk 1/2 tin
  3. Desiccated Coconut 1 cup
  4. Sour Cream 1/4 cup (For instant sour cream put a few drops of lemon juice or vinegar to cream and leave aside for 20 minutes)
  5. Coconut milk 1/4 cup
  6. Butter 50 grams
  7. Baking powder 1 tsp
  8. Baking soda 1/4 tsp
  9. Vanilla essence a few drops
  10. Warm Milk 4 tbsp
  11. 3 Eggs (Optional)

Instructions

  1. Sieve all the dry ingredients together.
  2. Mix cream and coconut thick milk (I had used Maggi coconut milk powder and dissolved it in a little warm milk and later mixed with cream).
  3. Add desiccated coconut to the dry mix.
  4. Beat butter and milkmaid at medium speed, add 1 tbsp of powdered sugar, vanilla essence and beat together.
  5. Add the cream mixture and beat for a minute.
  6. Fold in the dry mixture in batches.
  7. Add a little bit of warm milk to loosen the batter.
  8. Pour the batter in greased moulds and bake in a pre-heated oven at 160 degrees for 35 minutes.
  9. Cool, unmold and decorate with roasted desiccated coconut and serve.
