Ghee rice recipe is a fragrant special rice among the variety of rice recipes, a light and delicious rice variety to serve with a spicy vegetarian or non vegetarian curries or kurma. Ghee rice is an easy to make recipe, where spices are added to give a distinct flavour to the dish, a rich rice variety to enjoy on any occasion.

Rinse the jeera samba rice, drain the water in it and set aside. Take a heavy bottom pan, heat and add ghee in it.
When it is hot, add bay leaf, cinnamon, cardamom (Elaichi), clove, star anise and saute for a few seconds. Add cashew nuts and fry until it turns to golden brown in colour. Add ginger, garlic paste and fry.
Add in the drained rice into the pan, saute for 2 minutes.
Add coconut milk, 1 cup of water (2 cup of coconut milk and 1 cup of water to cook 1 1/2 cup of rice) and salt to taste.
Bring it to a boil, once it begins to boil simmer the flame, close the lid of the pan and cook it for 15 minutes.
Once it is done, add 2 tsp of ghee (optional) on the prepared rice. Let it rest for 5 to 6 minutes before you serve.
