Ingredients to make Ghee rice with coconut milk

  • jeera samba rice 1 1/2 cup

How to make Ghee rice with coconut milk

  1. Rinse the jeera samba rice, drain the water in it and set aside. Take a heavy bottom pan, heat and add ghee in it.
  2. When it is hot, add bay leaf, cinnamon, cardamom (Elaichi), clove, star anise and saute for a few seconds. Add cashew nuts and fry until it turns to golden brown in colour. Add ginger, garlic paste and fry.
  3. Add in the drained rice into the pan, saute for 2 minutes.
  4. Add coconut milk, 1 cup of water (2 cup of coconut milk and 1 cup of water to cook 1 1/2 cup of rice) and salt to taste.
  5. Bring it to a boil, once it begins to boil simmer the flame, close the lid of the pan and cook it for 15 minutes.
  6. Once it is done, add 2 tsp of ghee (optional) on the prepared rice. Let it rest for 5 to 6 minutes before you serve.

My Tip:

Always prefer to add very less quantity of ginger garlic paste in preparation. Ghee rice tastes perfect when served with spicy curry or kurma.
