Ingredients to make Thurai/Ridge gourd/Peerkankai/Beerakaya Curry

  • Ridge gourd 500 gms
  • cumin seeds/jeera 2 tsp
  • red chilli powder 2 tsp
  • salt to taste
  • oil 2 tbsp

How to make Thurai/Ridge gourd/Peerkankai/Beerakaya Curry

  1. Peel and cut ridge gourd to medium cubes. Check for bitterness if any before cooking.
  2. Heat oil and add ridge gourd pieces. Cover and cook till done.
  3. Make powder of jeera and chilli after slightly roasting them. ( I used bedege chilli for red color) Mix well, add salt. Add this to the cooked ridge gourd and stir fry till moisture in the gourd is absorbed and the oil floats.
  4. Remove and serve with hot rice and ghee.

My Tip:

Turai will not absorb oil. But the mentioned measure of oil is required to make the vegetable wilt. The excess oil can be drained when curry is done. Goes well with roti too. Use tender gourd for taste and texture of the curry.
