Spinach Cheese and Sweet Corn Muffins

Ingredients to make Spinach Cheese and Sweet Corn Muffins

  • spinach 1/2 cup (Microwave for 2 minutes, keep aside)
  • corn 1/2 cup (Microwave for 2 minutes, keep aside)
  • 1/2 cup milk
  • 1/2 cup maida
  • 1 tsp chilli powder
  • 1/4 tsp yeast
  • 1/4 tsp baking soda
  • 1 tsp Pizza Seasoning
  • 1 tbsp butter
  • 1 slice cheese chopped finely
  • 1 tomatoes sliced and grilled
  • 1 slice cheese chopped finely
  • salt to taste

How to make Spinach Cheese and Sweet Corn Muffins

  1. Microwave the butter and milk for 2 minutes. Sieve the flour.
  2. Add yeast to the flour, mix well and keep aside.
  3. Add flour to the melted butter mixture when it is warm.
  4. Add spinach, corn, baking soda, salt, chilli powder, pizza seasonings and cheese. Mix well, it should be sticky. If it is too thick, add more water or milk. Keep aside for 10 minutes.
  5. Preheat the air fryer for 5 minutes at 180 degree centigrade.
  6. After 10 minutes take silicon or muffin tray, spray butter and use a large spoon or ice cream scoop to fill the muffin tray.
  7. Since these do not rise much, you can fill the moulds up quite high.
  8. Place sliced tomato seasoned with pepper and salt on the top of each muffin.
  9. Bake for 15 to 20 minutes or until golden brown in colour.
  10. Serve warm with mint chutney or with ketchup.
  11. Spinach cheese corn muffin is ready.
