Peas stuffed Capsicum

Ingredients to make Peas stuffed Capsicum

  • capsicum - 2
  • peas - 100 gms (Boiled and mashed)
  • carrots - 1
  • Beans - 4 to 5
  • onions - 1 medium sized, chopped
  • green chillies - 2, finely chopped
  • ginger - 1 inch, finely chopped
  • garlic - 4 to 5, finely chopped
  • tomato - 1 small, finely chopped
  • oil - 1 tablespoon
  • mustard seeds - 1 teaspoon
  • fennel seeds - 1/2 teaspoon
  • turmeric - 1 pinch
  • butter for frying
  • salt as per taste

How to make Peas stuffed Capsicum

  1. Boil over night soaked peas/fresh peas and mash them roughly.
  2. Wash the capsicum well and cut open the capsicum from the top. Scoop out the inner seeds and keep aside (Don't throw them as we will be using the cut parts also). Season the outer side of the capsicum with salt and pepper powder and keep aside.
  3. Heat a spoon of oil in kadai. Add mustard seeds, fennel seeds and allow it to splutter. Add finely chopped ginger-garlic and fry for few minutes till the raw smell leaves. Add onions and fry till golden brown.
  4. Add finely chopped carrots, beans and the cut out parts of the capsicum (finely chopped) and fry till they soften.
  5. Add chopped tomato and fry till it softens.
  6. Add roughly mashed peas and mix well. Add in turmeric and fry for a few seconds. Add enough salt and remove from heat.
  7. Once the filling cools down with the help of a spoon stuff this into the seasoned capsicum and press well so they remain intact for frying.
  8. Heat a spoon of butter in a pan and shallow fry the capsicum till golden brown turning now and ensure to cook all sides and serve hot.
