Coconut Milk Rice

Ingredients to make Coconut Milk Rice

  • Basmati rice - 1 cup
  • coconut Milk - 1 1/2 cups
  • green chillies - 2
  • onion - 1
  • garlic - 4 flakes
  • cinnamon stick - 1
  • cloves - 2
  • cardamom Powder - 1/2 teaspoon
  • mint Leaves - A Handful
  • ghee - 1 tablespoon
  • salt - as needed or 1 teaspoon
  • cashew nuts - 10

How to make Coconut Milk Rice

  1. Soak basmati rice in half cup of water.
  2. Heat ghee in a pressure pan and fry cashew nuts till golden and keep aside.
  3. In the same ghee, add cinnamon and cloves and fry for a minute.
  4. Now add cardamom powder, green chillies, mint leaves, garlic and onion and fry well till raw smell goes.
  5. Now add coconut milk and half cup of water and add salt.
  6. When it boils add rice and mix well.
  7. Close the lid and keep the weight.
  8. When one whistle comes switch off the stove.
  9. Remove the lid and add fried cashew nuts and mix well.
  10. Coconut milk rice is ready to serve.
