Roti jala lace crepes with red thai curry

Ingredients Serving: 4

  1. 1/2 cup maida
  2. 1/2 cup coconut milk
  3. 1/4 cup water
  4. 1 tsp turmeric
  5. 1/2 tsp salt
  6. 1 tbsp oil
  7. Ingredients for the Thai veg red curry:
  8. 1/4 cup diced carrots microwaved for 2 minutes
  9. 1/4 cup sweet corn microwaved for 2 minutes
  10. 4 mushrooms
  11. 1/2 bell pepper
  12. 1 cup thick coconut milk
  13. 4 to 5 shallots, chopped
  14. For the red curry paste:
  15. 4 shallots
  16. 2 tsp chilli paste
  17. 1/2 tsp cumin powder
  18. Oil 3 tbsp
  19. 6 garlic pods
  20. Galangal 1/2 inch or ginger
  21. Coriander stalks 3
  22. lemon zest 2 inches
  23. coriander powder 1 tsp
  24. 1/4 white pepper powder

Instructions

  1. Grind the ingredients under 'The Red curry paste' to a thick paste, adding a little water. Keep aside.
  2. Heat the pan add oil when oil is hot add chopped shallots stir for 2 minutes then add bell pepper stir now add chopped mushroom stir add salt keep stirring for two minutes
  3. Now add red curry paste ground masala, fry until raw smell evaporates. Add carrots and corn, stir and add a little water. Cook for 3 minutes, after 3 minutes add coconut milk and cook for 5 minutes on a low flame. Add spring onions and turn off the gas.
  4. To make lace crepes: Take a bowl add flour, turmeric, salt and mix well. Add oil, coconut milk and water, make a smooth batter. To make lace patterns, take a beverage empty bottle and make 3 holes in it. Strain the batter and pour it in the bottle.
  5. Heat a non stick pan, swipe the surface with oil, by holding a bottle quickly make small circles over the griddle by twirling your wrists clockwise and at the same time moving your hand along so that you will be forming a larger circle made up of those small circles.
  6. Let the crepes cook for 2 minutes on a low flame. When done remove the crepe with a spatula and place on plate. Fold the crepe or roll it and serve with your choice of curry.
