Palak paneer is a punjabi dish. Pureed spinach, richness of cashew and cream. Healthy recipe for children with the goodness of calcium.
Beautiful green colour
Take one cup palak stems cut.
Take a bowl of hot water and blanch the palak along with two green chillies. Add a pinch of sugar so that it retains the colour of palak. After blanching of palak, put them in cold water immediately.
In a wok or a kadai take 1 tbsp butter and 1 tbsp oil (Or more if you want).
Add chopped garlic and saute for a minute. Add chopped onion and saute the onions until golden brown.
Take cashewnuts, ginger, half an inch and garlic cloves in a mixer. Blend well.
Add in blanched palak and green chillies. Make a puree.
To the cooked onions, add a pinch of turmeric.
Add the mixture of cashew and palak puree. Let it cook for 2 minutes, now add salt and add in the fried paneer or raw paneer pieces into the gravy.
Add a tbsp of fresh cream. Sprinkle some garam masala and a dash of lemon juice.
Lastly sprinkle a tsp of daniya powder. Cover the wok and turn off the flame.
Garnish with cream and serve hot.
