A yummy fluffy coconut cake

Ingredients Serving: 8

  1. Whole wheat flour - 1 cup
  2. Refined flour 3/4 cup
  3. Sugar - 1 cup
  4. Egg - 2
  5. Canola oil - 100 gm
  6. Salt - 1 large pinch
  7. Dried desiccated coconut - 1 cup
  8. Whole milk - 1 1/2 cup
  9. Baking powder - 2 tsp
  10. Baking Soda - 1/2 tsp
  11. Lemon rinds - 2 tsp
  12. Lime juice - 1 lime

Instructions

  1. Mix coconut powder and milk and let it stand for 20 minutes so that coconut swell ups.
  2. Sift salt, flours, baking powder and baking soda together.
  3. In a mixing bowl cream sugar and oil. Than add egg, one by one and keep mixing.
  4. Add lime juice and lemon rinds to the mixture.
  5. Add half of the coconut mixture and half of the flours and mix properly.
  6. Add remaining ingredients and mix it in the cake batter.
  7. Now transfer the batter in a pre greased and dusted cake tin.
  8. Keep the tin in a pre heated oven at 180 degree centigrade for 50-55 minutes or till the knife comes out clean.
