Malpua Rabdi

Ingredients to make Malpua Rabdi

  • For batter: 1/2 tin condensed milk
  • 50 gms maida
  • 50 gms paneer
  • 100 gms suji
  • 1 cup / 150 ml of water
  • A pinch of baking powder
  • oil for frying
  • For syrup : 1 1/2 cup sugar
  • 2 cups of water
  • 1 piece elaichi
  • For the Rabdi : 1 liter cream milk
  • 1/2 cup sugar
  • 2 piece elaichi

How to make Malpua Rabdi

  1. For Rabdi : Heat milk in a wok. Keep stirring till it is half the quantity. Add sugar and elaichi.
  2. For syrup: Take water in a wok, add in sugar, elaichi and boil for 10 minutes.
  3. For malpua : Take condensed milk in a vessel, add in maida, suji, baking powder and water. Blend it nicely till its soft.
  4. Keep the batter aside for 15 minutes.
  5. Mash paneer nicely. Add it to the above batter. Blend nicely, so that there are no lumps.
  6. Take oil or ghee in a flat wok. Heat it on a medium flame, slow down the flame and pour the batter with the help of a spoon. Fry it on a low flame so that it is properly cooked, fry till golden brown.
  7. Put these malpua in sugar syrup for 3-5 minutes.
  8. Strain the excess syrup from it. Place it in a bowl, pour 2 - 3 spoons of chilled rabdi over it and decorate with nuts.

My Tip:

If the batter is thick, you can add a little milk.
