Hyderabadi Chicken Dum Biryani

Ingredients to make Hyderabadi Chicken Dum Biryani

  • Basmati rice 1 kg
  • chicken 1 1/2 kg
  • yoghurt 1/2 kg
  • chilli Powder 2 tbsp
  • garam masala powder 1 tbsp
  • turmeric powder 1 tsp
  • Whole garam masala:
  • cinnamon 4 sticks
  • cardamom pods 5
  • caraway seeds 1 tsp
  • Black peppercorns 1 tsp
  • cloves 6
  • salt to taste
  • coriander and mint chopped a handful
  • onions, deep fried 3 to 4
  • Same oil to be reserved for marination
  • ghee 1 tbsp
  • Colour to sprinkle on top

How to make Hyderabadi Chicken Dum Biryani

  1. Boil the rice with all the whole masalas, drain and keep aside.
  2. Marinade the chicken with all the masalas including the reserved oil in which the onions are fried, except ghee.
  3. Do not add whole of it, add about 1 cup.
  4. Let it rest for atleast 2 hours.
  5. For the dum: Arrange the layers according to your preference but see to it that the final layer is that of the rice.
  6. Mix the colour in little milk and pour on top.
  7. Also add the ghee.
  8. Garnish with some fried onions and coriander leaves.
  9. Serve hot with raita.

My Tip:

Do not over soak the rice. Soak it just before you keep the water for boiling. By the time the water is boiled, your rice will be perfectly soaked.
