ABOUT Chocolate Malpuas with Orange Caramel Sauce RECIPE

This is a tweak into the authentic malpua recipe by adding chocolate flavor. Indulge in this super delicate treat with some refreshing orange flavored caramel sauce. The combination of chocolate and orange is just irresistable. Awaken your taste buds with this luscious dessert drenched in sugar syrup, and finally drizzled all over by rich orangy caramel sauce.

Ingredients Serving: 4

  1. All purpose flour 1/4 cup
  2. Cocoa powder 1/4 cup
  3. Milk powder 1 tbsp
  4. Milk 1/4 cup
  5. Egg 1
  6. Sugar 2 tbsp
  7. Vanilla Essence 1/4 tsp
  8. Baking soda 1/4 tsp
  9. Ghee for shallow frying
  10. Almonds flakes 2 tbsp
  11. Sugar 1/4 cup (for sugar syrup)
  12. Water 1/4 cup (for sugar syrup)
  13. Fresh orange juice 1/2 cup (for orange caramel)
  14. Orange zest 1/2 tsp (for orange caramel)
  15. Sugar 2/3 cup (for orange caramel)
  16. Water 1/4 cup (for orange caramel)

Instructions

  1. Prepare the sugar syrup by dissolving the sugar in water and letting it to boil. When it boils, switch the flame off and allow to cool completely.
  2. In a bowl, mix together all purpose flour, cocoa powder, milk powder, sugar and baking soda.
  3. To this mixture, whisk in the egg, vanilla essence and milk.
  4. Whisk thoroughly to form a smooth batter without any lumps.
  5. Heat ghee in a pan to shallow fry the malpuas.
  6. Pour in a scoop of the batter to form a small circle, of size as you wish.
  7. Once one side is done, flip it over to cook the other side too.
  8. Once done, drain excess ghee, if any by using paper towels. Allow to cool.
  9. For making the orange caramel, mix water and sugar in a heavy bottomed pan.
  10. On a low flame, keep stirring until all the sugar is dissolved.
  11. Once sugar is dissolved, turn the flame to high and let it boil, without stirring.
  12. Once in a while, swirl the pan. The syrup turns to amber color in almost 8 minutes or so. Keep waiting and swirling, do not stir.
  13. Once it changes the color, lower the flame, and carefully add the orange juice and orange zest, little by little. The solution will bubble vigorously.
  14. Keep stirring until the solution becomes smooth and any crystals formed melt.
  15. Allow the solution to cool completely.
  16. Soak the malpuas in sugar syrup for 1-2 minutes. And pour the orange caramel just before serving.
  17. Garnish with chopped almonds or pistachios.
