Ingredients to make Chocolate overloaded fudge ice cream

  • 1 cup whipping cream
  • 3/4 cup condensed milk
  • 4 tbsp cocoa powder
  • 1 tsp vanila essence
  • 1/4 cup Chopped and roasted nuts like walnuts, almonds, pecans and groundnuts.
  • For fudge:
  • 1/4 cup dark chocolate
  • 1/8 cup semi sweet or milk chocolate
  • 1 tbsp butter
  • 1 tbsp Roasted walnuts
  • 1 tsp Vanila essence
  • 1/4 cup condensed milk
  • For truffle:
  • 1/4 cup milk or dark chocolate
  • 1/4 cup heavy cream

How to make Chocolate overloaded fudge ice cream

  1. For the fudge: Add butter, chopped chocolate and condensed milk in a heat proof pan. Melt it on a double boiler but do not overcook otherwise it will become grainy. Add in the roasted walnuts.
  2. Lined baking pan with a parchment paper. Pour this mixture and level with a spatula. Keep it in the fridge and let it set.
  3. Make truffle or ganache: Warm heavy cream in a thick pan and pour it over the chopped chocolate. Let it rest for 15 seconds and then mix well till it becomes shiny. Keep aside.
  4. For the Ice cream: Whipped chilled whipping cream till you get soft peaks, add condensed milk and mix it well.
  5. Add cocoa powder, vanilla essence, truffle, chopped roasted nuts and fudge (chopped in bite size). Mix it gently.
  6. Keep this mixture in an airtight or icecream mould and covered with a cling wrap. Keep it in fridge for at least 6 hours or till it sets. Enjoy it with hot brownie.
