Us Gujarati's love mumra , we find different ways to use it to make our dishes. This particular dish is a family favourite. Simple to make and gets ready in a jiffy. One can make it more nutritious by adding sprouts, pomegranate etc. Mamra Chatpati is a snack which is originated from Gujarat, the Western Coastline State of India. Gujarati cuisine is not only varied and lip-smacking but are also high in nutritional values. Different cooking styles and the combination of spices are incorporated in preparing different dishes marking uniqueness of each. Gujarati snacks are popular in every region of India and Mamra Chatpati is one of the famous snacks of Gujarat. Gujarati snacks are mostly deep fried and prepared out of gram flour. Mamra Chatpati is available in almost every part of India, though it is known by different name in different regions. The names are 'Sev Mamra Chat', 'Sev Murmura', 'Sev Kurmura', 'Sev Mamra' and 'Mamra Chatpati'. You can easily prepare it anytime at your home. Firstly, wash the mamra and put it in a sieve. Heat some oil in a pan and add mustard seeds, when the mustard seeds crackled add sesame seeds, hing and vegetables like potato, onion, capsicum and green chilies and cook them till they become soft. You can add the other vegetables of your choice. Add salt, garam masala, turmeric powder, red chili powder, mamra, curry leaves, tomato, sugar and lemon juice and mix them well. Garnish with sev and bundi. If you want to prepare a healthy Mamra Chatpati then you can add some sprouts and pomegranate seeds.

Ingredients Serving: 4

  1. Mamra - 200gms
  2. Potatoes - 2 shredded
  3. Onion - 1 sliced
  4. Capsicum - 1 sliced
  5. Green Chillies - 2-3 cut in small pieces
  6. Coriander- as per choice
  7. Rai- 1 tsp
  8. Sesame seeds- 2 tsp
  9. Salt to taste
  10. Sugar- 1/2 tsp
  11. Red chilli- 1/2 tsp
  12. Turmeric powder- 1 tsp
  13. Garam Masala (optional)- 1/2 tsp
  14. Tomato- 1 diced
  15. Bundi to garnish
  16. Sev to garnish
  17. Hing- a pinch
  18. Curry leaves
  19. Lemon juice as per choice

Instructions

  1. 1.Take a sieve, wash the mamra and put it aside.
  2. 2.In a pan heat oil and add rai ,after rai has popped add sesame seeds, hing and all veggies(except tomatoes) and green chilies.
  3. 3.Add salt and Cook till the veggies become soft.
  4. 4. As soon as veggies are done add garam masala,turmeric,red chilli. Mix well
  5. 5.Next add mamra, curry leaves,tomato,sugar and lemon juice. Mix well
  6. 6.Garnish with sev and bundi. One can also add sprouts ,pomegranate seeds etc
