Ingredients Serving: 6

  1. 500 grams chicken
  2. 3 tbsp oil
  3. 3 small onions
  4. salt as per taste
  5. 1 tsp pepper
  6. 1 tsp 5 spice powder
  7. 3 garlic cloves, minced
  8. 1/2 cup cashews
  9. 1 tsp cumin (jeera)
  10. 3 cloves
  11. 1 bay leaf
  12. 3 tbsp tomato puree
  13. 2 tbsp butter
  14. 1 cup chicken stock
  15. 2 tbsp red chilli powder
  16. 1/2 tsp ground cinnamon
  17. 50 grams chopped chocolate or 2 tbsp cocoa powder
  18. 1 tsp sesame seeds
  19. 5 Green chillies
  20. Fresh coriander for garnish

Instructions

  1. Place a kadai over medium heat and add some oil. Add the chillies, 2 onions, garlic and stir well till it soften for 5 minutes.
  2. Meanwhile in a separate kadai boil 3 cups water and add cloves, cinnamon, bay leaf, 2 green chillies, coriander, garlic cloves, 1 small onion. Let it boil for 5 minutes. Add chicken pieces and let it boil for 30 minutes.
  3. Turn off the flame and take chicken pieces out and shred it into small pieces.
  4. Add the raisins, tomatoes and mix well. Cook for sometime. Add 1 tsp spice powder while cooking.
  5. Carefully pour the mixture into a blender. Add the butter, chicken stock, chilli powder, jeera. Puree the mixture until smooth. Season with salt and pepper. (I added less broth because I like mole to be thick).
  6. Return the mixture to the kadai over medium heat. Cook for 15 minutes, stirring occasionally.
  7. Add the chopped chocolate and stir until melted. Add the shredded chicken and heat through for about 10 minutes.
  8. Transfer the mole to serving dish and garnish with corriander. If you like you can add sesame seeds as garnish.
