Ingredients Serving: 2

  1. Eggplant 1, sliced
  2. Turmeric powder 1 pinch
  3. Salt to taste
  4. Mustard oil as required

Instructions

  1. Slice the eggplant in round pieces, medium thickness.
  2. Make a paste of salt and turmeric powder and apply on both sides of the sliced eggplant, keep aside for 5 minutes.
  3. Add mustard oil in wok and let it heat up.
  4. Deep fry the marinated eggplant slices.
  5. Serve hot.
