ABOUT Egg Akuri Masala - The Parsi Way RECIPE

We love egg bhurji (scrambled egg). So this time I decided to make it a little different - The Parsi Way. It tastes so amazing and too delicious.

Ingredients Serving: 3

  1. 4 Eggs
  2. 1/4 cup Milk
  3. 2 Tomatoes, finely chopped
  4. 2 Onions, finely chopped
  5. 2 green chillies, finely chopped
  6. Finely chopped corainder leaves
  7. 1 sprig of curry leaves (kadipatta)
  8. 2 tsp of giner garlic paste
  9. 1 tbsp of roasted jeera powder (you can grind it coarsely too)
  10. 1/2 tbsp turmeric powder (haldi)
  11. 1 tbsp red chilli powder
  12. 1/2 tbsp garam masala
  13. Salt as per taste
  14. Oil as required

Instructions

  1. In a pan, heat oil and fry the onions on a medium flame till almost caramelized.
  2. Add tomatoes, green chillies, sprig of curry leaves (kadipatta), ginger garlic paste, turmeric powder, chilli powder and jeera powder. Mix well.
  3. Cook till tomatoes are cooked through and the oil is released. Lower the heat and add salt and chopped coriander. Mix well.
  4. In a bowl, beat egg and milk. Pour it slowly into the pan, stirring constantly. Keep the heat low and keep on mixing else akuri will stick to the pan.
  5. Remove from the heat when it comes to the consistency you like, loose and runny or firm.
  6. Serve with hot roti or sliced bread. If you want, you can add a spoon of butter on top of it.
