Ingredients Serving: 3

  1. Baigan 1/2 kg
  2. Tomatoes 4 big
  3. Onions 2 medium-sized
  4. Garlic 5 buds
  5. Oil 2 tbsp
  6. Jeera 1 tsp
  7. Hing a pinch
  8. Haldi powder 1/2 tsp
  9. Dhania powder 1 tsp
  10. Lal mirch powder 1 tsp
  11. Garam masala 1 tsp
  12. Namak as per taste
  13. Water if required

Instructions

  1. Wash and cut brinjals, tomatoes, onions and garlic. Keep aside.
  2. Make puree with onion, tomatoes and garlic buds.
  3. Take a kadhai. Add oil, jeera and hing.
  4. Add in sliced onion and saute.
  5. Add puree and all the dry ingredients and let it cook for 3 minutes.
  6. Add brinjals and mix well. Put lid on the kadhai and let it cook for sometime and stir occasionally.
  7. Serve hot with chapatis.
