ABOUT Rose flavoured rava malpua RECIPE

Malpua is a rich North Indian dessert prepared during festivals. It is pancake dunked in sugar syrup and served with rabri. Malpua is usually prepared with refined flour and deep fried in oil. I wanted to try a healthy version so prepared in wheat flour and rava and shallow fried.

Ingredients Serving: 8

  1. Rava – 1/2 cup
  2. Wheat flour – 1/2 cup
  3. Yogurt – 2 tbsp
  4. Milk – 1 cup
  5. Roof afza / rose essence – 1 tsp
  6. Cardamom powder – 1/2 tsp
  7. Rose water – 1 tsp
  8. Ghee – for shallow frying
  9. Pistachios – for garnishing
  10. FOR SYRUP:
  11. Sugar – 3/4 cup
  12. Water – 1/4 cup
  13. Rose water – 1 tsp

Instructions

  1. Boil milk and keep aside to cool. Prepare sugar syrup by boiling sugar and water until it reaches to one string consistency. Remove from flame and add rose water and mix well.
  2. Let us start making malpua, take rava, wheat flour and cardamom powder in a mixing bowl.
  3. Pour cooled milk little by little and whisk without lumps.
  4. Then add roof afza, rose water and yogurt to it. Whisk again to get a thick batter in pouring consistency.
  5. Let it sit for 10 minutes. The rava may absorb the milk and become thick. Add little more milk if required.
  6. Heat a pan adding required ghee. Pour a ladle full of batter into it to form circle. Do not spread.
  7. Cook in medium flame until it slightly changes colour on both sides. Flip carefully as the malpua will be delicate.
  8. Then immediately put into warm sugar syrup and let it remain for a minute. The syrup has to coat well.
  9. Drain the syrup and transfer into serving plate. Garnish with pistachios.
