Carrot/Gajar Halwa

Ingredients to make Carrot/Gajar Halwa

  • 1 kg carrots
  • 1+1/2 litre full cream milk
  • Half glass of water
  • 1 big bowl fresh malai
  • 1 bowl desi ghee
  • 1 bowl sugar
  • 4 to 5 cardamom seeds crushed
  • 1 bowl mixed dry fruits
  • Few pieces of raisins
  • 8 to 10 chopped almonds
  • 8 to 10 chopped cashews
  • Few melon seeds

How to make Carrot/Gajar Halwa

  1. Wash peel and grate carrots.
  2. Steam grated carrots in a cooker for one whistle with half glass of water or microwave it for 5 minutes .
  3. In a heavy bottom pan or karahi cook carrots with milk .
  4. Let the carrots cook till all the moisture evaporates or achieve thick consistency of the mixture.
  5. While cooking keep stirring on low flame.
  6. Then add the bowl of malai in it.
  7. And again let the mixture cook till mix nicely or get moisture free consistency.
  8. Then turn off the flame.
  9. In another heavy bottom pan or karahi heat ghee.
  10. Add sugar and let it caramalize.
  11. Keep stirring till the sugar melts in ghee on slow flame.
  12. Add and roast half the quantity of dry fruits with Cardamoms seeds
  13. Put the carrot milk mixture in the caramelized sugar vessel
  14. Mix all the mixture well.
  15. Let it cook for few more minutes.
  16. Turn off the gas
  17. Serve hot with rest of the dry fruits.

My Tip:

While cooking keep stirring over low flame.
