Ingredients to make Cauliflower and chilli served with Picada Sauce( Inspired by a Catalan style Pesto)

  • cauliflower Florets (1 cup).
  • Bhavanagari chillies ( non spicy) 6 no.
  • garlic grated 1 tsp
  • spring onions ( cut) 2 tbsp
  • olive oil. 3 tbsp.
  • sesame seeds 1 tbsp.
  • Dried parsley 1 tbsp
  • Dark Chocolate Chips ( grated ) 2 tsp
  • Cocoa powder 1 tsp
  • Roasted almonds chopped 1 tbsp
  • Roasted walnut Chopped 1 tbsp
  • White chilli powder 1/2 tsp
  • pepper 1 tsp
  • salt to taste.
  • garlic Bread Seasoning 1 tbsp
  • Vanilla extract. 1 tsp
  • Fresh cream 1 tbsp

How to make Cauliflower and chilli served with Picada Sauce( Inspired by a Catalan style Pesto)

  1. Wash Cauliflower florets, season with salt and pepper. Add 1 tsp oil and bake in oven at 200 c for 15 minutes.
  2. Meanwhile heat olive oil in a nonstick pan. Add crushed garlic and saute till brown. Take out and keep aside. Now in same oil fry chillies well , remove, sprinkle salt and pepper and keep aside.
  3. In the same pan heat oil , add spring Onions stir fry, add sauteed garlic, chilli, pepper. Fold in Roasted Almonds Walnut, Sesame seeds, white Chilli powder, Parseley and grated dark Chocolate Chips. Turn the gas off. Add Vannilla extract and fresh cream ( with added cocoa) keeping a little for Garnish.
  4. Now take out in a serving plate and spread the Cauliflower over it. Serve with Garnish of coriander leaves, Fresh Cream and Cocoa powder.

My Tip:

Dark Chocolate adds a pleasing bitterness to the pesto. You can substitute Amul dark chocolate in place of Dark Chocolate Chips. You can take Hot chillies in place of non spicy Chilli. In that case no need to add white chilli powder.
