ABOUT Bhoger khichuri RECIPE

Khichuri is an essential part of the spread offered to Devi Durga.This is my version as i have made some change to enhance the taste.But the basic recipe is this.

Ingredients Serving: 5

  1. Rice-2cups
  2. Yellow lenthil/kandipappu- 1/2cup
  3. Moong dal-1/2cup
  4. Ghee- 4tbsp
  5. Oil-4tbsp
  6. Onion - 1 (large)(optional if fasting)
  7. Green chillies- 6
  8. Dry Red chillies - 3
  9. Green cardamom -3
  10. Bay leaf-1
  11. Cloves-3
  12. Cinnamon-2(medium)
  13. Cumin/jeera-1tsp
  14. Potato-2 (large)
  15. Tomatoes- 5(medium)
  16. Carrot - 2(large)
  17. Green peas(Soaked)-1/2 cup
  18. Curry leaves-1sprig
  19. Ginger garlic paste- 1tbsp(avoid garlic if fasting)
  20. Black pepper powder- 1tsp
  21. Turmeric-1tsp
  22. Salt- As per your taste
  23. Corriander- As per taste

Instructions

  1. First a little preparation is needed,chop potatoes,tomatoes carrots,onions, green chillies and can add any other vegetables based on your taste.Soak defrosted green peas for 15min.
  2. Soak rice,moong dal,toor dal in same bowl all together for 15min. For this recipe to have thick consistency, for 1cup rice we add 4cups water.
  3. Cook the rice with some salt and pepper powder for 3-4whistles in pressure cooker.
  4. Take other kadai,heat ghee,oil and now add cardamom,cloves, bay leaf, cinnamon,jeera,curry leaves, dry red chillies and fry it for few minutes.
  5. Now add green chillies,onions and cook for sometime.
  6. Add ginger garlic paste and saute for 1 min.Now add the remaining vegetables and cook for 7-10min.
  7. Put some turmeric powder,salt required for vegetables as we already added in rice.
  8. Add water to boiled vegetables.After vegetables are cooked add the cooked rice to it and some ghee and some pepper powder,coriander leaves.Stir well and cook for 5-10min on low flame.
  9. Now the khichuri is ready.You can serve with potato wedges.
  10. If you are serving for Durga devi as prasadam avoid adding onions and garlic as some may consider this as non-vegetarian.
