ABOUT Chia Choco Ragi Cupcakes RECIPE

Extremely healthy and delicious cupcakes, packed with whole grains and chia seeds goodness.

Ingredients Serving: 6

  1. Ragi Flour - half cup
  2. Whole Wheat Flour - half cup
  3. Cane Sugar - 1 cup (You can use normal sugar also)
  4. Eggs - 2
  5. Milk - 3/4 cup
  6. Vanilla - 1 tsp
  7. Baking powder - 1 tsp
  8. Baking Soda - 1/2 tsp
  9. Cocoa powder - 2 tbsp
  10. Butter - 2 tbsp
  11. Chia seeds - 2 tbsp

Instructions

  1. 1.Soak the chia seeds in half cup of milk for 10-15 mins. It will convert to a jelly-like consistency.If you are not sure about using chia seeds, use half the quantity first time and see. If you like the taste, you can double it next time.
  2. 2.Sift the flours, cocoa and baking powder and soda and keep aside.
  3. 3.Whisk the egg and sugar until frothy. Add the butter and whisk some more, until fully combined.
  4. 4.Add vanilla and the soaked chia with milk and give it a mix.
  5. 5.Now add the dry ingredients and give it a mix. The batter will be a little tight at this stage. Slowly add the remaining milk till the batter reaches a pouring consistency. Kindly note that cupcake batter should be thinner than normal cake
  6. 6.Line a muffin tin with small cupcake liners. Pour two spoons or 3/4th the height of the liners of batter into each mould.
  7. 7.Bake in a pre-heated oven for 20-25 mins at 180 degrees Centigrade or when a toothpick inserted in the middle of the cupcake comes out clean.
