ABOUT Chocolate risotto with toasted almonds RECIPE

Risotto , the classic Italian rice dish (also the apparent death wish of all televised food competitions) in a delcious chocolatey avatar! Traditionally , risotto is made with arborio rice cooked in a broth to a creamy consistency. This dessert version is made with good ol' basmati rice , milk and dark chocolate. It is creamy and delicious, with the taste and texture somewhere between a warm chocolate pudding and a rice kheer ! The toasted almonds add a crunch to this yum bowlful!

Ingredients Serving: 2

  1. 100 grams dark chocolate
  2. 2 - 2.5 cups milk
  3. 1/4 cup basmati rice
  4. 1.5 tablespoons granulated sugar
  5. 2 tablespoons unsalted butter
  6. 25 grams or a small handful almonds

Instructions

  1. Toast the almonds in a pan or in the oven (6 to 8 minutes at 180 C) until golden brown. Chop roughly . Keep aside.
  2. Grate or finely grate the dark chocolate . Keep aside.
  3. Wash the rice and drain.
  4. In a pan, melt one tablespoon butter and add the rice and mix well with the butter.
  5. Add quarter cup of milk , sugar and cook on medium low heat while stirring often .
  6. Once the milk has been absorbed, add another quarter cup milk and continue cooking in the same way.
  7. Once the rice is cooked (usually takes about 2 cups for me) , add the remaining tablespoon of butter and the grated chocolate .
  8. Stir until the chocolate s melted and the risotto is nice and creamy . Top with the toasted almonds and serve warm !
