Ingredients to make Chocolate risotto with toasted almonds

  • 100 grams dark chocolate
  • 2 - 2.5 cups milk
  • 1/4 cup basmati rice
  • 1.5 tablespoons granulated sugar
  • 2 tablespoons unsalted butter
  • 25 grams or a small handful almonds

How to make Chocolate risotto with toasted almonds

  1. Toast the almonds in a pan or in the oven (6 to 8 minutes at 180 C) until golden brown. Chop roughly . Keep aside.
  2. Grate or finely grate the dark chocolate . Keep aside.
  3. Wash the rice and drain.
  4. In a pan, melt one tablespoon butter and add the rice and mix well with the butter.
  5. Add quarter cup of milk , sugar and cook on medium low heat while stirring often .
  6. Once the milk has been absorbed, add another quarter cup milk and continue cooking in the same way.
  7. Once the rice is cooked (usually takes about 2 cups for me) , add the remaining tablespoon of butter and the grated chocolate .
  8. Stir until the chocolate s melted and the risotto is nice and creamy . Top with the toasted almonds and serve warm !

My Tip:

This makes 2 generous servings or 3 moderate ones. Cook the rice to your desired consistency, adding more milk if required. This tastes best served warm !
