Ingredients to make Beans Thoran (Kerala Style)

  • Beans (Chopped into thin pieces) – 1/2 kg
  • garlic Cloves (Crushed) – 4-5
  • Green Chilies (slit) – 3 or 4
  • turmeric – A pinch
  • salt – As Required,
  • oil – 2 tbsp
  • mustard seeds – 1 tsp
  • curry leaves – A sprig
  • coconut (grated) – 1/2 Cup
  • onion (sliced) – 1 small (Optional)

How to make Beans Thoran (Kerala Style)

  1. Take a bowl mix chopped beans,onion,green chillies,garlic,turmeric and salt. Mix well and keep aside.
  2. Heat coconut oil, add mustard seeds allow it to splutter now add curry leaves and pour whole mix of veggies and give a nice mix.
  3. Add little water just 1 or 2 tbsp water to veggies cover with lid and allow to cook in medium heat.
  4. Remove the lid, add grated coconut mix well and turn off the gas.
  5. Serve with Rice as a side dish

My Tip:

Turmeric is optional, I avoid it as i want beans to look fully green.
