Arbi cooked in delicious coconut milk.

Ingredients Serving: 5

  1. Arbi- chopped, 1 large bowl
  2. Thick Coconut milk- 1 cup
  3. Green chilli 5-6
  4. Salt to taste
  5. Asafoetida powder
  6. Tamarind juice - 1 tsp

Instructions

  1. Pressure cook arbi for only 1 whistle adding little salt and required water.
  2. Once the cooker is cooled, transfer the contents into a wok along with the boiled water.
  3. Add coconut milk, green chillies, salt and bring it to boil.
  4. Then add tamarind juice.
  5. Once it is boiled, switch off the flame and add asafoetida powder and cover the lid to retain the aroma for a minute or two.
  6. Serve hot.
