Ingredients to make Many Layer cake / Tree Cake

  • 250 gms Butter plus extra melted (optional)
  • 1 1/2 cups Caster sugar
  • 1 1/2 cups plain Flour sifted
  • 10 Egg yolks
  • 8 Egg whites
  • 3 tbsp Cocoa powder mixed with 3 tbsp warm water
  • 2 tsp natural vanilla extract

How to make Many Layer cake / Tree Cake

  1. Add egg yolks and 1/2 cup of sugar to a bowl and beat until fluffy and frothy. In another bowl, cream butter and 3/4 cup of sugar. Stir in vanilla.
  2. In a large bowl, whisk egg whites till stiff peaks appear. Combine egg yolk and butter mix. Gently fold in the sifted flour.
  3. Now fold in the yolk mix without knocking out much air. Measure and divide the batter in two equal halves. Combine cocoa and water to one half.
  4. Preheat your oven at 160C. Take a spring foam pan and grease it and layer it with parchment.
  5. First add in 1/3 cup of vanilla butter and tap gently to spread evenly. Bake this for 12 minutes or till sponge spring back when touched.
  6. Pour 1/3 cup of cocoa flavoured batter and bake again. Repeat alternating layers until you complete the batter. Grease the edges with brush dipped in melted butter.
  7. When you finish with batter and baking, insert the skewer and check, if it runs clean our cake is ready.
  8. Remove from oven and leave it to cool on wire rack. Cut as desired and serve with love.

My Tip:

Be very patient. Do not rush this cake. Do not worry about burning the lower layer, the moisture from the uncooked layer keeps coming down hence the cake does not get burnt.
