  • Flour 2 cups
  • Coconut Milk Powder 1/2 cup + 1/4 cup for glaze
  • Mango Tang Powder 1/2 cup
  • Sugar 1 cup + 1/2 cup for glaze
  • Refined oil 1/2 cup
  • Eggs 4
  • Baking powder 1 tsp
  • Baking soda 1/4 tsp
  • Salt a pinch
  • Lemon juice 2 tbsp
  • Buttermilk 1/4 cup
  • Vanilla essence 1/2 tsp
  • Peach food colouring few drops (optional)
  • Mint leave a handful
  • Water 1/2 cup
  • Rum 2 tbsp

How to make Mango and Coconut Cake with Coconut, Rum and Mint Glaze

  1. Preheat the oven to 180°C and grease and flour a bundt cake tin.
  2. Sift together the flour, baking powder, baking soda and salt. Add the 'Mango Tang' powder and Coconut Milk powder, mix well.
  3. In a bowl, beat together the sugar and oil. Add the food colouring (optional) and the vanilla essence.
  4. Add the four eggs, one at a time, beating well between each addition.
  5. Now add the flour mix in three batches, beating well to get a smooth batter.
  6. Add the lemon juice and enough buttermilk (you may need less than a 1/4 cup) to get a good batter consistency.
  7. Pour into the prepared tin and bake for between 30 to 40 minutes, or till a skewer inserted in the middle comes out clean.
  8. Remove from oven and pour the glaze while still hot.
  9. Coconut-Mint-Rum Glaze: Mix together sugar,coconut milk powder, handful of mint leaves and water.
  10. Cook on a medium flame till the sugar has melted. Add a couple of tablespoons of rum and pour over the warm cake.
My Tip: Coconut , Mint and Rum Glaze Coconut and rum is an evergreen combination. So while the cake is baking, prepare the delicious glaze.
