ABOUT Chocolate Sandesh RECIPE

Chocolate does magic to the melt in the mouth bengali delicacy. Chocolate sandesh is a delight ful, guilt free, gluten free, low calorie dessert that is worth trying.

Ingredients Serving: 8

  1. 1 liter milk
  2. 1 Lemon
  3. 2 tablespoons unsweetened cocoa powder
  4. 8-10 tablespoons powdered sugar (depending on taste)
  5. 10 almonds or some dark chocolate chips

Instructions

  1. Boil the milk. Let it cool. Remove the cream (malai) from the top.
  2. Boil the milk again. Add lemon juice. Stir till the milk curdles. The milk should curdle properly leaving green whey.
  3. Strain the cottage cheese (paneer) through a muslin cloth. Squeeze out the whey.
  4. Place the muslin cloth with cottage cheese under running water. Squeeze and hang for thirty minutes to drain out excess water.
  5. Transfer paneer to a mixer. Add sugar and cocoa powder and blend till smooth.
  6. Transfer the mixture to a heavy bottom wok. Cook the mixture on low flame stirring continuously.
  7. After few minutes of cooking, the mixture will become smooth and creamy.
  8. Keep cooking till the mixture begins to loose moisture and starts coming together.
  9. Turn off the heat when it comes together as a single lump. Cooking beyond this point will make it dry and rubbery.
  10. Transfer it to a plate. Let it cool.
  11. Knead warm mixture with the heel of the hand. Your hands will become greasy and the mixture will become smooth and soft.
  12. Pinch small balls of the mixture. Shape Sandesh and flatten them.
  13. Garnish with chopped almonds or dark chocolate chips. Serve.
  14. If you do not wish to go through the rigmarole of making paneer at home, follow the quick version.
  15. Quick Version- Take 200 g paneer slab available in stores
  16. Churn with sugar and cocoa powder in a blender. Follow the instructions above.
