ABOUT Karela (Bitter Gourd) in Coconut Gravy RECIPE

This Bitter gourd recipe is a traditional south indian style recipe and doesn't taste bitter at all.

Ingredients Serving: 4

  1. Onion:- 2 roughly chopped
  2. Tomato:- 1 roughly chopped
  3. Coconut:- 1/2 cup grated
  4. Garlic:- 3-4 cloves
  5. Curry Masala Powder or Chicken Masala Powder or normal coriander, chilly and zeera powder
  6. Bitter Gaurd:- 2 nos cut in round shape (Make sure to remove the seeds)
  7. Oil as required
  8. Mustard Seed:- 1 tsp
  9. Cumin;- 1/2 tsp
  10. curry leaves:- 1 sprig
  11. Turmeric:- 1 tsp
  12. Salt to taste
  13. Tamarind :- 1/2 lemon size soak in water

Instructions

  1. Heat oil add garlic, onion, tomato and mix them well until it turns tender.
  2. Add grated coconut, Curry Masala and fry for few minutes.
  3. Remove from heat and allow it cool.
  4. Once its cool, grind this masala to paste and keep it ready.
  5. Now heat oil in another pan, add mustard seeds, zeera, once it starts spluttering add curry leaves and bitter gourd and fry for little while.
  6. Add turmeric, salt mix well and cover with lid and cook for 7-8 mins until it turns little brown in color.
  7. Once it turns brown, add tamarind juice, ground paste and mix well.
  8. Allow it cook for 10 mins masala will blend nicely with bitter gourd and gravy becomes thick.
  9. Switch off the flame. Garnish with curry leaves and serve hot with Rice.
