Ingredients to make Mixed Veggies (Labra Tarkaari, just amazing)

  • pumpkin 250 to 300 grms
  • Brinjals 200 grms
  • Sweet potato 200 grms
  • Raw banana 200 grms
  • carrot 200 grms
  • Beans 200 grms
  • potatoes 200 grms
  • coriander seeds 1 tbsp
  • cumin seeds 1 tbsp
  • red chilli 4 no.or red chilli powder 1 tsp
  • turmeric powder 1/2 tsp
  • mustard oil 3 tbsp
  • ghee 2 Tbsp
  • For pancha phoran:
  • mustard seeds 1 1/2 tsp
  • cumin seeds 1 1/2 tsp
  • fennel seeds 1 1/2 tsp
  • fenugreek seeds 1 1/2 tsp
  • kalonji 1 1/2 tsp
  • sugar 3 tsp
  • coriander leaves for garnish
  • bay leaves few
  • Kari patta few

How to make Mixed Veggies (Labra Tarkaari, just amazing)

  1. Dry grind masala for pancha phoran.
  2. Wash and cut the vegetables.
  3. Heat oil in a pan, add grated ginger, saute for a minute. Add Panchal Phoran masala. Saute for 1 minute. Add chopped vegetables one by one according to the time they take for cooking.
  4. Saute for 5 minutes. Add salt and turmeric and cover with a lid and let it cook for 15 minutes. If veggies dry up, sprinkle water in between.
  5. Now add ground coriander and Cumin powder. Add Bay leaves and Curry patta. Add chilli powder according to taste.
  6. After veggies are cooked add sugar and Ghee and serve with coriander leaves garnish.

My Tip:

While Cooking Vegetables, pour some water over the lid to prevent Masala and Veggies to Burn.
