Chuin Aloo Besara (Potato and Drumsticks fry in a Mustard Paste Odia Style)

Ingredients to make Chuin Aloo Besara (Potato and Drumsticks fry in a Mustard Paste Odia Style)

  • potato (medium) 2 no.
  • Drumsticks 5 no.
  • mustard seeds 2 tbsp
  • cumin seeds 1 tsp
  • Dry chilies 3 no.
  • garlic cloves 6-7 no.
  • turmeric powder 1 tsp
  • Panch phutan / phoron 1 tsp
  • mustard oil 4 tbsp
  • salt as needed

How to make Chuin Aloo Besara (Potato and Drumsticks fry in a Mustard Paste Odia Style)

  1. Soak the mustard seeds, garlic, dry chili and cumin seeds in half a cup of water and keep aside for at least 15 mins.
  2. Take and wash all the drumsticks, peel off the outer layer and cut it into 3-4 inch pieces. Cut potatoes into thick slices (1/2 inch), keep aside along with drumsticks.
  3. Drain the soaked mustard seeds, garlic, dry chili and cumin seeds. Grind very well into a fine paste by adding a little water.
  4. Take a pan, heat the mustard oil. Add panch phoran & allow spluttering. Add potatoes along with turmeric powder and stir fry them for around 30 secs. Next add the drumsticks and fry for another 30 secs.
  5. Then add the ground paste and mix well until the vegetables are coated with it.
  6. Add 1 cup of water and salt. Cover and cook until the potatoes are cooked or till all the water dries out. Serve hot with rice-dal combo.

My Tip:

The amount of mustard and cumin seeds is perfect for around 5 drumsticks. If the amount is increased, then there will be a bitterness in the dish.
