ABOUT Buckwheat Galette aka Kuttu Dosa RECIPE

Galette, a traditional French dish, made with buckwheat which is none other than our Navratri staple kuttu ka atta. This is my idea of fusion.

Ingredients Serving: 2

  1. Buckwheat flour or Kuttu ka atta - 60g
  2. Mushrooms - 4-5 medium sized ones sliced
  3. Capsicum - Red, yellow or green - a small one cut into squares
  4. Cheddar cheese - 4 tbsp grated
  5. Water - 1.5 glasses
  6. Salt - to taste
  7. Dry thyme - 1 tsp
  8. White Pepper powder - 1/2 tsp
  9. Olive oil - 1 tbsp ( for the filling )
  10. Refined oil - 5-6 tbsps ( for the galette / dosa )

Instructions

  1. Mix kuttu flour, water and salt to make a smooth batter like that of a dosa. Keep it aside.
  2. In a wok, add olive oil and add the sliced mushrooms and cut capsicum.
  3. Let it cook for a while till the mushrooms and capsicum become tender.
  4. Add thyme, white pepper powder and salt. Remove from fire and keep aside.
  5. Put a dosa griddle (tawa) on the stove and let it get warm. Add a tsp of oil and ladle some batter on it and spread it like a dosa.
  6. Once done on one side flip it over and cook it on the other side too. If it feels dry add some oil along the side of the galette.
  7. When both sides are done. Place some of the mushroom capsicum filling on top and sprinkle grated cheese.
  8. Transfer to a plate and serve hot.
