How to make Eggless Chocolate cupcakes with cream cheese frosting

  1. Melt butter and chocolate in the microwave . Sift the flour, cocoa and baking soda from a height.
  2. Add 1 tsp salt . Incase you are using salted butter skip the salt. Mix all dry ingredients.
  3. Gradually pour the hot water. Now add the chocolate mix, vinegar and vanilla essence. Beat well
  4. Pour the mixture in the cupcake liners and bake for 15-20 mins at 180 degree celsius. Check using toothpick.
  5. For the cream cheese frosting: Mixe or whisk and cream together the butter and cream cheese until very smooth and creamy. Add the essence.
  6. Then slowly keep adding the icing sugar and keep mixing. If you feel its too thick only then add little milk.
  7. Then you can refrigerate this frosting for some time. Separate them and make portions and add very little of your favourite colours in these and mix.
  8. Pour into piping bag and ice your lovely cupcakes :)
My Tip: I add very little flavouring to the frosting. Once the frosting is made I separate them in 3-4 bowls, add some lemon rind in one; some coffee powder in one and little strawberry essence in the other.
