Chocolate Marbled Cake

Ingredients to make Chocolate Marbled Cake

  • butter 225g
  • Caster sugar 225g
  • eggs 4 beaten
  • flour 225g
  • Baking powder 10g / 2tsp
  • salt 1/4 tsp
  • Ground almonds or cashew nut 50g
  • milk 30ml
  • Dark chocolate 200g
  • Vanilla Essence 1 tsp
  • water 1 tbsp

How to make Chocolate Marbled Cake

  1. Break 50g dark chocolate into a bowl. Add water and vanilla essence.
  2. Place over simmering water. Stir until the chocolate is melted and leave to cool for 10 minutes.
  3. In a medium bowl put the butter, salt and caster sugar and beat together until fluffy. Beat in the eggs one at a time. Fold the flour sieved with baking powder and the ground nuts and then stir in the milk.
  4. Spoon half the mixture into a mould. Stir the cooled but soft chocolate into the remaining mixture. Spoon over the white cake mix. Draw a knife through the cake mixture in a spiral. Level the surface of the mixture.
  5. Bake at 180 Degree Celsius for about 45 minutes or until a fine skewer inserted in the centre comes out clean.
  6. To make the Chocolate Frosting: Break 150g of dark chocolate into a bowl. Place over simmering water and stir until the chocolate is melted. Then pour this over the cooled cake working quickly to coat the top and sides. Leave to set for 1 minute.
