Ingredients Serving: 5

  1. For marination :-
  2. Paneer:- 1 Cup cut in cubes
  3. Onion:- 4 (Fried)
  4. Green Chilies:- 6, make a paste and keep it ready
  5. Ginger Garlic Paste:- 3 tbsp
  6. Cauliflower:- Big florets (1 big cup)
  7. Green peas:- 1 big cup
  8. Carrot:- 1 big cut in big chunks
  9. Beans:- 8-10 pieces (Cut in bite size pieces)
  10. Capsicum:- 1 cut in big chunks
  11. Mint leaves :- 1 cup
  12. Coriander leaves:- 1 cup chopped finely
  13. Kasuri Methi:- 2 tbsp
  14. Curd:- 1 small Cup
  15. Turmeric:- 1 tsp
  16. Coriander powder:- 2 tbsp
  17. Chilly Powder:- 2 tbsp
  18. Garam Masala:- 2 tbsp
  19. Salt to taste
  20. Oil/Ghee:- As required
  21. Fried Onion:- 2 tbsp
  22. For Boiling Rice:-
  23. Rice:- 3 Cups
  24. Clove:- 3 pieces
  25. Green Cardamom:- 2 pieces
  26. Black Cardamom:- 1 pieces
  27. Bay leaves:- 2
  28. Garnishing:-
  29. Milk:- 1 Cup
  30. Rose Water:- 1/2 cup
  31. Kesar:- a pinch
  32. fried onion:- 1 tbsp
  33. Fried:- Cashew,Almond and raisins

Instructions

  1. Half cook rice and keep aside, while boiling rice add Bayleaves, Green Cardamom, Black Cardamom and cloves to water these give a flavor to Biryani.
  2. Take big bowl and mix all above ingredients of marination together and keep it ready.
  3. Heat big non stick wok, add ghee and add all marinated veggies and allow it to cook until veggies are half cooked.
  4. Once veggies are half cooked, spread half cooked rice and add fried onion on top, now spread another half of rice.
  5. Now Mix Milk, Kesar and rose water together and pour it on top of Biryani.
  6. Spread again remaining fried onion, cashew, almond and raisins.
  7. Cover with lid and reduce the heat of gas and cook this for 20 mins on very low flame.
  8. Serve hot with raita.
