ABOUT Chicken Korma RECIPE

There are certain dishes like Chicken Korma which are so usual in our orders when we go and eat outside in Indian restaurants that we end up taking them for granted. However, this specific dish is very close to my heart because of its texture and mild though flavorful taste.

Ingredients Serving: 4

  1. 750 grams chicken
  2. 3 medium sized onions
  3. Salt to taste.
  4. 1 table spoon Dhaniya/Coriander Powder
  5. 1 tea spoon Turmeric powder
  6. 1 table spoon red Kashmiri chilli powder
  7. 1 tea spoon green Cardamom Powder
  8. 1 tea spoon Cinnamon Powder
  9. 1 table spoon whole black pepper
  10. 4-5 Cloves
  11. 1-2 bay leaves.
  12. 7-8 cloves of garlic
  13. 1 tea spoon garam masala.
  14. 8-10 almonds
  15. 1 cup curd

Instructions

  1. First of all, slice the onions and fry them shallow in a kadhai which can take the chicken that you have as we will use the same pan and oil for cooking chicken.
  2. Once they are dark brown, take them out and let them dry so that they are crispy.
  3. Put the onions and 1/4th cup curd in a blender and make a fine paste.
  4. Also, make paste of garlic.
  5. Now use the same oil and add chicken and garlic paste.
  6. Cook till the chicken is partially cooked and oil starts separating a little.
  7. Now add all the powdered and whole spices.
  8. Mix well and cook till oil separates.
  9. While it is cooking, microwave the almonds in a bowl in water for about 3-4 minutes. It will be very easy to peel them off. Add them in the korma.
  10. Now add the onion paste and rest of curd.
  11. Mix well and cook till it is done, or till oil separates.
  12. Finally add the garam masala and mix well.
  13. Garnish with freshly chopped coriander and serve with hot chapatis or naan.
