ABOUT Herbed Egg Breakfast Pancake RECIPE

Eggs are a powerhouse of proteins. Instant energy, awesome taste and versatility make it an amazing option for breakfast.

Ingredients Serving: 4

  1. 3 eggs
  2. 6 baby tomatoes halved (You can use regular tomatoes, just chop them in chunky bits)
  3. 2 onions roughly chopped
  4. Few sage leaves (or any other herb like basil or coriander)
  5. 1 tsp Dried mixed herbs (optional)
  6. Salt & Pepper as per taste

Instructions

  1. In a nonstick pan heat some oil. Add onions. Saute for few seconds then add baby tomatoes. Let it cook for 1 min. Remember we do not have to breakdown the tomatoes. Add salt.
  2. In a bowl add eggs, sage, salt and pepper. Mix well.
  3. Pour over the eggs in the pan. Cook on the least heat as possible. Mine took about 7 min to cook.
  4. Let it rest for 3-4 min in the pan before taking it out.
  5. Just slide it over to your serving plate. Enjoy with toast!
