ABOUT Eggy Muffins RECIPE

Ingredients Serving: 5

  1. 7 eggs beaten with black pepper and salt
  2. Veggies of your choice cut into small cubes
  3. I used capsicum green and red ones along with green onions about a cup
  4. Mozzarella cheese a cup
  5. Feta cheese 1/2 a cup
  6. You can even use cheddar cheese if you wish
  7. Parsley or coriander for garnishing
  8. Olive oil as needed
  9. Muffin liners
  10. Oregano 1 tbsp
  11. Italian seasoning 1 tbsp

Instructions

  1. Saute the veggies in olive oil about a tbsp or more.
  2. Also in the beaten eggs, add about 2 tbsp of olive oil along with salt and pepper.
  3. In a muffin pan, firstly add a tbsp of the sauteed veggies followed by the cheeses and lastly followed by the beaten egg about 2 to 3 tbsp in each of the muffin liners.
  4. Bake these goodies on 180° for about 18 to 20 mins in a preheated fan assisted oven.
  5. Enjoy them as it is or with any of your favourite dips.
