Eggy Muffins

Ingredients to make Eggy Muffins

  • 7 eggs beaten with black pepper and salt
  • Veggies of your choice cut into small cubes
  • I used capsicum green and red ones along with green onions about a cup
  • Mozzarella cheese a cup
  • Feta cheese 1/2 a cup
  • You can even use cheddar cheese if you wish
  • Parsley or coriander for garnishing
  • olive oil as needed
  • Muffin liners
  • Oregano 1 tbsp
  • Italian seasoning 1 tbsp

How to make Eggy Muffins

  1. Saute the veggies in olive oil about a tbsp or more.
  2. Also in the beaten eggs, add about 2 tbsp of olive oil along with salt and pepper.
  3. In a muffin pan, firstly add a tbsp of the sauteed veggies followed by the cheeses and lastly followed by the beaten egg about 2 to 3 tbsp in each of the muffin liners.
  4. Bake these goodies on 180° for about 18 to 20 mins in a preheated fan assisted oven.
  5. Enjoy them as it is or with any of your favourite dips.

My Tip:

You can use butter in place of olive oil.
