Chatpate Aloo

Ingredients to make Chatpate Aloo

  • potatoes (boiled and cut in cubes ) 6-7
  • sugar 2 tbsp
  • water 1 1/2 Cup
  • whole red chillies 7-8
  • coriander seeds 1 tbsp
  • fennel seeds 1 tsp
  • cumin seeds 1 tsp
  • Chat masala 1 tsp
  • red chilly powder a pinch
  • black salt 1/2 tsp
  • coriander leaves a few
  • salt as per taste
  • oil for frying
  • tamarind pulp 1 1/2 tbsp

How to make Chatpate Aloo

  1. Mix sugar and water and keep it on flame for preparing the sugar syrup, cook until you get a thick syrup.
  2. In a separate pan, dry roast the red chillies, coriander seeds, fennel seeds, cumin seeds and grind to make a fine powder.
  3. Lightly fry the potatoes, keep on a paper towel and slightly press it with your palm, do not crush it.
  4. Now fry them again until light brown and crispy.
  5. Add the ground masala about 2 1/2 tbsp to the sugar syrup.
  6. Now add the black salt, salt, tamarind pulp, chaat masala. Mix well or better give it a boil.
  7. Add the fried potatoes to the syrup, mix well.
  8. Garnish with red chilly powder, a pinch of chaat masala, coriander leaves and serve.
