Baked Egg Fried Rice

Ingredients to make Baked Egg Fried Rice

  • For the fried rice:
  • Cooked rice - 1 cup
  • Boneless chicken - 50 gm
  • Chopped bean - 1/8th cup
  • Chopped carrots - 1/8th cup
  • Chopped capsicum - 1/8th cup
  • chopped ginger - 1/2 tsp
  • Chopped garlic - 1/2 tsp
  • Chopped green chillies - 1 tbsp
  • chilly sauce - 1/4th tsp
  • Ajinamoto (optional) - 1/2 tsp
  • chilly powder - 1/4th tsp
  • salt as per taste
  • Refined oil as required
  • Other Ingredients:
  • eggs - 2
  • Grated mozzarella cheese - 3 tbsp
  • pepper powder 1 tsp

How to make Baked Egg Fried Rice

  1. Heat a wok, add refined oil. Put the chopped ginger, garlic and chillies.
  2. Once they sweat, add the boneless chicken and stir.
  3. After about a minute, add the chopped vegetables and stir.
  4. Add salt, chilly powder and cook till the mixture is done.
  5. Then add the chilly sauce, ajinomoto and mix.
  6. Now add the cooked rice, stir till everything is mixed, switch off the flame.
  7. Now once the rice is cooled a bit, mix the grated cheese.
  8. Take 2 ramekins, put the rice mix in them.
  9. Crack one egg on top in each of the ramekins, sprinkle pepper powder and little salt.
  10. Bake them at 180 degree Celsius, in a preheated oven for 15 minutes. Serve.
